de·sa·bà·fo

n., from Portuguese

1.Venting, an outpouring. From the verb desabafar: to let it out, get it off your chest, keep nothing bottled up.

We opened Desabafo to let good things out: a drink made right, a plate that tastes of Piedmont, the right music and time to enjoy the wonderfully ordinary things around you. We're two brothers: Simone behind the bar, Fabio in the kitchen. You bring the rest. And if you feel at home, we've done our job.

"Enjoy the music, grab a drink, dance, breathe, have a good one!"

Beyond Meat vegan burger at 45°

04Vegan and vegetarian

A crazy good hummus, and that's just the start

We make our chickpea hummus three ways: classic, tomato and beetroot. Can't choose? Get the ciapatut trio, Piedmontese for "grab it all". Then there's the Beyond Meat burger, which you can also have with porcini, plus seaweed fritters and focaccia. Here, skipping meat doesn't mean settling: it means choosing.

Niche wines from France and Spain (by way of the Langhe)

Small wineries, lots of organic. Bubbles from Limoux, Camargue rosé, an orange wine from Occitanie and a pet-nat that fizzes just right. From Spain, Ribera del Duero; from our own backyard, Barbaresco and Nebbiolo from Neive.

Vermouth

And since this is Turin, where vermouth was born, we keep about ten: from Turin, Piedmont and Spain. Ask Simone for today's pick.

07The ingredients

This autumn we went mushroom hunting.

For the Fassona beef tartare we grabbed a basket and boots and went into the woods looking for porcini. If you don't eat meat, the same porcini can go with the Beyond Meat burger. We choose everything else the same way: cured meats and cheeses from small farmers, our homemade tuna sauce, craft beer, vermouth from people who still make it the old way. If it lands on your table, we know where it comes from.
